The "boss" (my wife) wanted "something simple and clean". After searching Home Depot, Lowes, and Ganahl lumber I found World of Moulding that had the edge pieces. (Quick Sidenote: I'd recommend World of Moulding before the big home improvement stores. Better selection and they'll cut the pieces while you wait.)
I extended the mantel a few inches and replaced the old moulding with something new and cleaner.
After building out the mantel I used some trim moudling pieces and framed out the fire place.
Added some hardware to help finish it out.
 
Here's what it currently looks like.... (okay, it's not quite finished but I'm doing this in my spare time so you get the picture)
